Meaning: Named after grape must. The word records a recipe, not a plant
Latin mustum, "new wine, must" → Old French moust + the ending -arde → mostarde → English mustard.
The condiment was originally made by grinding the seeds into grape must, so the word describes the preparation rather than the plant. Mustard is a recipe that ate its own ingredient list: first the method, then the condiment, then the seed, then the plant, and finally the color of the paste.
